November challenge - are you up for it?

I posted the November Challenge on the message boards (Home Gym).  Be sure to stop by, check it out and I hope that you will participate!  I've made it pretty easy.  Workout every day ( can be ANY workout), keep a food journal daily (surprise, surprise!) and drink at least 64 oz of water daily.



We will take our measurements, weight and before photos, but don't worry, you do not have to post any of these for everyone to see.  I just want you to have the info available so you can see the changes after 30 days.

As the months progress, I will make the challenges a little harder for you die hards!

I am going to be doing a hybrid round of P90X and Turbo Fire.  My two favorite workouts combined!  This is going to be great fun!

do you have a team?

Do you have a person in your life that motivates you?  What about that person that pulls you down?  I truly believe we need to get the negative people OUT of our lives.  I don't need anyone telling me that I can't, I need cheerleaders (so to speak) to build me up and remind me that I CAN!



I have so many people in my life that do just that for me.  Of course, Brian is my biggest fan.  He is always pushing me a little farther.



  I have friends that encourage me and keep me on track.




 My coach, Tina is another great motivator.  She will call me out when I am not doing what I need to be, I need that for sure.

As well as my other Beachbody friends and teammates!












Tony Horton is another person that motivates me.  I love his workouts, I love that he encourages us to "Do your best and forget the rest!"



I can not wait for Tony's new book to come out!  When I was in Dallas, Tony was talking about his book and sharing with us a few things that will be in it.  I have already pre-ordered my copy, you can get yours here now too!

I am especially excited to see what he recommends for diet.  I eat a mostly vegan diet, and so does Tony.  I find it hard to make sure that I am getting the protein amounts that I need to get the results I want.  Missy  Costello (Tony's chef) is wonderful and her food is amazing, so I know the recipes will be good!

just a little pick me up

For the most part, I have quite a bit of energy!  This is usually a good thing, but I do have days that are low energy.  I find that using my Shakeology daily does give me more energy as well as many other great benefits, but sometimes I just need a little extra somethin' somethin'.



Recently, I recieved Celsius, a premium, healthier energy drink to try.  I was a little leery, I don't really agree with energy drinks, they are usually loaded with sugar and tons of caffeine.  Plus, I think they taste bad, but

Celsius claims to burn calories and to be a great addition to your fitness program.  I don't know about these claims, but it will give you a great energy boost that will allow you to get through those low-energy days and/or a tough workout!

Excitement abounds!

I'm so excited for so many reasons!

1)  Last night we had a GREAT time at fit club.  7 people came and we sweat and laughed our way through Fat Burning Express and then killed it with 6 mins abs.  I think a few of us will be feeling it today!  I'll try to remember to get photos next week.  We get to chatting and I always forget to take pics! 

2)  I have a new message board here.  I'll be getting the tab up this week hopefully and then you can just click on it to go straight to the boards.  We can hang out and chat about anything and everything!  Check it out now. 



3)  With the free coach sign-ups at Beachbody, our team is growing like crazy.  Trust me, this is a great opportunity to share your love of fitness with others and make a little money on the side!  If you want to get involved, please let me know.  We need your help.  New Year's is just around the corner and people are going to need help with those resolutions!  So, if you have ever thought about it, think it might be something worth looking into, now is the time to get started!

4)  Brian and I are planning our next trip.  That always makes me happy!  We are thinking about going to Branson.  We haven't been there in a long time, so it should be fun!

5)  Jake and Morgan carved their pumpkins and cleaned up their mess!  YAY!  That really excites me :)




6)  We are just about finished with the last house we bought.  Brian has put it on the market, so keep your fingers crossed that it sells quickly.  It turned out so cute and I just have to clean it on Monday.  I found the perfect rug for the living room.  We put laminate flooring in the kitchen, living room and hallway.  Looks so good and the rug will be absolutely perfect!

It doesn't take a lot to excite me, but I have a blessed life and can't be upset about anything these days!!

Fit Club Recipe

Vegetarian Curry (from the Power 90 meal plan)

1/2 diced onion
1 Tbsp curry powder
1 cup veggie stock
3 oz. tomato paste
1/2 small clove chopped garlic
1 cup chickpeas
1 cup chopped tomatoes or cauliflower or a combo of the two
1 cup cooked brown rice (boiled or steamed)

Heat nonstick pan to medium.  In a tablespoon of stock, saute onion and garlic for three minutes. Add powder, stock, chickpeas, tomatoes and/or cauliflower, and paste.  Simmer for 10 mins or until cauliflower is tender.  Serve over boiled or steamed rice.

Serves 2 (If you are flying solo, don't stress becasue curry always tastes better the second day!)

I will sometimes make dinner for just Brian and myself, I may add in some kind of meat for Brian but he usually eats whatever I make.  When the kids are all here, I always have another option for them.  They don't always like "my" food!

Raw Food for Everyone

Yesterday we took Madelyn to the pumpkin patch.  We have a great one here in town (Fredrickson Farms!!)

They have some great decorations and lots of pumpkins and mums.  It was so pretty.  Here are a few of my favorite photos:






The first one is my favorite and the last one is Brian favorite!  She is just so cute.  I know I'm a little biased and all, but still!!!!

It was such a busy weekend and we had a blast, but I'm worn out! 

Recently, I was given the opportunity to preview the cookbook Raw Food for Everyone, Essential Techniques and 300 Simple-to Sophisticated Recipes by Alissa Cohen.  I love this book.  So much information on how to prepare raw food as well as the good recipes.

Alissa turned to a raw food diet after battling with weight gain, fibrmyalgia and other illnesses.  She was able to heal her body and have more energy, brighter skin and a happier and healthier state of mind!

When I had my health problems, I switched to a raw food diet as well and I can tell you that it is the healthiest possible diet out there.  It is a life-style change and not always easy, especially living in the midwest with those cold winters, but I was able to turn my health around very quickly with diet changes!

Since I have some sweet potatoes I thought I'd share this wonderful soup!

Sweet Potato - Grapefruit Soup

An unusual pairing, but this creamy but light soup is bright in flavor and in color.  It's perfect during the winter when sweet potatoes and grapefruit are abundant.  Chiles add a little kick.

Two good -size sweet potatoes put through a juicer will yeild pporximatley 2 cups juice. There is no need to peel the potatoes before juicing them.

Garnish with some jalapeno rings or grapefruit segments if you like.

I can't wait to try the pizza crust recipe!  I'll let you know how it turns out!



Makes 4 servings
2 cups sweet potato juice (from about 2 sweet potatoes)
2 cups coarsely chopped sweet potatoes (from about 1 sweet potato)
3 cups coconut milk
2 cups freshly squeezed grapefruit juice
2 jalapeno chiles
8 basil leaves, torn

1.  Put the sweet potato juice, shopped sweet potatoes, coconut milk, grapefruit juice and chiles in a Vita-Mix, blend to a puree.

2.  Divide the soup among 4 bowls, garnish with the basil and serve immediately.

Cover and refrigerate for up to 1-2 days.
 
Discussion:  Do you use a juicer?  I have one and I'll go in spurts with it.  I'll use it like crazy and leave it out on the counter, then put it away and forget about it for a long time!

What a weekend!

It has been a busy,fun weekend for me.  Friday night we had a get together with high school classmates.  Lots of fun, chatting and dancing.  We will definitely get together again soon!


Saturday I hosted a booth at the Mind and Body Healthy Living Expo.  I was able to share some Beachbody love!!  We had a blast talking to everyone!

Last night we went to friends house for a GREAT dinner!  Sweet potatoes were wonderful, big salad, regular baked potatoes some ribs, (I didn't eat those, but they looked yummy!) and blackberry pie!  Brian isn't feeling great, so we went home after visiting for a little bit after dinner and both just went to bed.  We were tired!

Holy Sweet Potato Batman!

Last week we went out to the Doubledee's farm and picked the last of the green beans and decided to take a look at the sweet potatoes!  Oh my, they were HUGE!  Check these bad boys out!!

I can't wait to make all kinds of yummy sweet potato dishes! I'm thinking some sweet potato fries will be in order for sure! Hermina kept them to dry out and now they are ready!!  YAY!!

Einkorn Pasta

My sweet baby Madelyn wasn't feeling well yesterday.  We cuddled, slept, coughed and I wiped her poor, little nose at least a thousand times!  She still found time to dance, laugh and kiss!!! 
She didn't feel much like eating, but she managed to have some oatmeal and when I had to run to the store, I saw these great looking raspberries.  She saw those and I think she might have eaten her weight in them!  She was loving them! 

Since I had her a little longer than usual, she also had dinner with us.  I made her macaroni and "cheese".  She gobbled it up!

The wonderful people over at Jovial Foods sent me a couple of boxes of their new Einkorn pasta to try and we LOVED it!

Brown Rice Pasta with Peanut Sauce and Veggie Streamers:
Ingredients:


8 ounces Brown Rice Spaghetti
1 tablespoon peanut oil
1/2 cup minced onion
1 tablespoon minced ginger
1/4 cup julienned red pepper
1/4 cup julienned carrot
1/4 cup julienned zucchini
2 cloves garlic, minced
1 teaspoon red curry paste
1/2 cup creamy organic peanut butter
1/4 cup coconut milk
1 teaspoon fish sauce
2 tablespoons lime juice
1/4 cup sliced scallions
1/4 cup chopped cilantro
Sea salt to taste

Preperation:


Bring a large pot of salted water to a boil. Cook spaghetti for 11 minutes and drain, reserving 1/2 cup of pasta water.

While pasta is cooking, heat peanut oil in a large, deep-sided skillet over medium heat. Add onion and ginger. Sauté 3-5 minutes, until softened, and add pepper, carrot and zucchini. Sauté another 2-3 minutes, until vegetables are just tender. Scrape vegetables into a bowl.

Add garlic and curry paste to the pan and sauté for 30 seconds, until fragrant. Add peanut butter, coconut milk and fish sauce, reduce heat to low and stir until melted together. Pour in lime juice and enough pasta water to thin to the consistency of thick cream.

Toss vegetables and spaghetti together in the pasta pot to mix well. Scrape in peanut sauce and toss again to coat thoroughly. Sprinkle in scallions and cilantro, season with sea salt if desired, and give the pasta a final toss before serving.

Serve warm or cold.
Serves 6

Fit Club Tuesday - P90X!!

It is Tuesday and that means it is time for Fit Club!  Whoo-hoo!!!

Fit Club Workout:

Today's workout is P90X.  Over the weekend, I got to workout with Tony Horton.  He is so amazing and fun!  He looks great!  He is just as goofy in person as he is in his videos.  We tried some of the new moves that are in his new P90X MC2 videos that will be coming out in 2011.  All I can say is OUCH!  I am still sore this morning from Saturday's workout!

I was requested to do Kenpo X.  This is one of my favorite workouts and I certainly don't mind hosting it tonight!  If you are in the area, please come by the Community Center at 7 PM and workout with us and taste Shakeology!!!  You'll have fun and get to hear all the great news that came out this weekend!

Fit Club Recipe:

I recently received a copy of Easy & Delish Comfort Food - 123 Classic Recipes Your Family Will Love.  This is a great bookazine from delish.com that includes several recipes that will be a great addition to your holiday planning, plus I loved the section on roasting vegetables 101!

Pumpkin Chowder
from Country Living

3 tbsp extra virgin olive oil
2 leeks, trimmed of tough green tops and chopped
3 large garlic cloves, finely chopped
2 medium green bell peppers, chopped
2 1/4 lbs pumpkin peeled, seeded and cut into 1/2 by 1 inch thick pieces
1 1/2 tsp chopped fresh marjoram
1/4 tsp crushed red pepper
 2 bay leaves
1/4 tsp salt
1/4 tsp freshly ground black pepper
1 1/4 cups frozen corn
6 cups vegetable broth

1. Heat olive oil in a large pot or Dutch oven over medium heat.  Add leeks and cook until very soft, about 5-6 mins.

2.  Add chopped garlic and cook for about  mins.  Stir in green peppers, reduce heat to med-low and cook until peppers soften, about 8 more mins.  Add the pumpkin,  marjoram, red pepper bay leaves, salt, pepper, corn and broth and cook until pumpkin is tender, about 30 mins.

Each serving:  about 146 cals, 3 g protein, 22 g carbs, 6 g total fat ( 1 g sat fat), 3 g fiber, 0 mg cholesterol, 428 mg sodium

Success Club Leadership Conference!

I am home from the Beachbody Success Club Leadership Conference in Dallas! 

So much fun, so much learning and met so many wonderful people!

I am just excited to get back to work and get started on all this wonderful training and share the exciting news with my team of coaches and customers and friends!

It started off bright and early on Friday morning. Cool, foggy and beautiful.

Got in to Dallas and immediately had some fun in the hotel!




We had a great time at dinner:

Then we went in to a presentation/public speaking seminar.  This was PRICELESS!!!  Really helped and opened my eyes to a few things I was doing that needed improvement!

Sunday was full of more info and training!  Nothing better than that!

busy days and a trip!

Good Morning!  I've had a super busy week so far and it is going to be just as busy today.  I am getting ready for my trip to Dallas tomorrow for the Beachbody Success Club Leadership Conference.  We are going to have a blast.  Workout with Tony Horton and Donna Joyner, auditioning for the next Power 90 and P90X: MC2 videos, training sessions, spending time with my Beachbody friends and I can not wait! 

I'll be sure to take a lot of photos!!!  Posts over the weekend may be sparse, I'm just not sure how much downtime we will have, but I'll be sure to get caught up on Monday!

I love pumpkin anything in the fall.  I always stock up on the Libby's canned pumpkin and hoard it so I can use it even when it can't be found!



This is a great treat for breakfast or as a snack.  So tasty!

8 oz almond milk (I prefer Blue Diamond unsweetened, but you can use any type of milk you like)
1/4 cup pumpkin
1 tbsp agave nectar
1/2 tsp pure vanilla extract
1/4 tsp cinnamon
1/8 tsp nutmeg
1/8 tsp ginger

Mix in blender with ice (if desired).  Sprinkle top with pumpkin pie spice. Serves 1.

Discussion:  Is there a food item that you buy a LOT of to keep on hand in case they run out?  Maybe I am alone in this pumpkin hoarding!
