I have several magazines that I read monthly. Some I subscribe to and others I pick up at the store when I see something that interests me.

I love Self, Health, Fitness, Shape for exercise, health and fitness tips and info, Vegetarian Times and Veg News for great recipes and products to try.

Goodbye Detergent Original Spaghetti Scrubs




Spring is in the air and with it comes spring cleaning. I just want to go on the record. I hate to clean. I will avoid it as long as possible and do anything else that is more fun (which is anything in my opinion).

So, when I saw Goodbye Detergent spaghetti scrubs, I was intrigued. If I can find something that will make my cleaning life easier, then I'm all for it. The wonderful people at Goodbye Detergent sent me a couple of these scrubs to try!



The great thing about these scrubs is that you don't have to add cleaner to them. It's already there. Just wet and get to scrubbing.



Last week I had to clean a rental house. Usually most of our renters have not been horrible about leaving the house filthy. We didn't get so lucky with this one. The shower was disgusting. I'm fairly certain that it hadn't been cleaned ever. There was a handful of razor covers in one corner, red, gold, green and black mold. UGH! So, I tackled it with everything but the kitchen sink. The scrubs really did help! I was so surprised when it came clean. I also used the scrubs on the stovetop. I can't talk about it. It was that bad. We did the best we could with the scrubs and then had to get a razor blade scraper to get all the gunk off.

The scrubs come in long sheets and you are thinking - what in the world is that? In fact, the boys were trying to figure out what it was and a scrubby was not on their list of guesses!!! These scrubs are made from corn cobs and peach pits. For tough jobs, like the shower, you can add a little cleaner to them, but you really don't need a lot.
After you wet them, this is what they look like. You just get to scrubbing! When you are done cleaning, just hang it over the faucet and it dries completely. No stinky smell, and they will last for months. I love that it will save on cleaners and it is better for the environment.

Sun Dried Tomato and Chick Pea Salad

A garlicky dressing and the sweet-sharpness of cooked red onion in vinegar give this unusual salad memorable qualities. Serve with warm pita bread as a light lunch dish or a first course.

1/2 small red onion, infely chopped
1 tbsp white wine vinegar
1/4 cup red wine vinegar
1 clove garlic, minced
sea salt and freshly ground black pepper
2 tbsp extra virgin olive oil
1 can (16 oz) chick peas (garbanzo beans) drained
1/3 cup diced sun dried tomatoes packed in oil
2-3 tbsp chopped fresh parsley or tarragon
2 tbsp fresh lemon juice

Bring a small saucepan of water to a boil, add the onion and cook 30 seconds. Drain and toss with the white wine vinegar.
Mix together with the red wine vinegar, garlic, salt and pepper and gradually whisk in the oil. Toss the chick peas, sun dried tomatoes and onion with the dressing and let marinate 1 hour.
Add the chopped parsley or tarragon and lemon juice, toss to mix and serve at room temperature.

Discussion: Do you choose one body part to work on at a time, or do you prefer to work your whole body. I like to focus on one body part. Right now it is my rear-end. Swimsuit season is coming, time to firm up the fanny!

Food Revolution!

How did you do with the pushup challenge yesterday? I got all 100 in. A few of you let me know on facebook how you were doing. I loved it! That was a lot of fun and I can't wait until next Friday to see if you all are up to the challenge again! Be sure to friend me on facebook and twitter if you want! We can all post how we are doing on Friday's. It'll be fun!

Did any of you watch Jamie Oliver's Food Revolution last night? It was the 2nd week and luckily they showed both episodes back to back. I DVR'd them and watched the first one last night and the second one this morning! I am loving this show. It is hard to watch at times, but I live in an area that is similar to Huntington WV. Missouri is not a health state either. I know that if we all work together to spread the word about health, we can make changes. Even if it is one person at a time, it is so worth it. I really wish that I had known what I know now when I was raising my kids. They are all grown now, but I would've done so many things differently. But, I can't focus on that now. I must focus on now. I can lead by example, they are learning from me still and I love that. This is the first generation that will not live as long as their parents. It's really sad and so easy to change. I know that I will be teaching Madelyn how to be her healthiest! She will know what a potato and tomato along with all the other fruits and veggies are!

With my Beachbody biz, it is so wonderful to help people change their unhealthy habits! It is the best part of my job and I truly mean that from the bottom of my heart!

I always made my kids eat the school lunches. It was too much work to prepare their lunches and I really thought that they were getting a good meal. Boy, was I wrong.... today so many of the schools rely on processed foods. I didn't realize just how much.

Friday Follow and Friday Challenge!

It's Finally Friday! Brian is going to a buddies night, so I am hosting a Girls Night In! Some of my high school girlfriends are coming over and we are going to make pizza and watch movies and just have a good time. We always do! I love that we are still in touch and get together! We get together for birthdays and that usually means once a month. It's so much fun!

I'm going to start a new Friday Challenge. Don't worry, it won't be too hard :) Every Friday it will be something different. Might be food or water related, might be exercise related. Could be organization or writing..... whatever strikes my fancy. But, I will be doing it with you!

Today's Challenge will be to do 100 push-ups. These can be spread out throughout the day or more power to you if you can knock them all out at once. I was in a push-up challenge a few years ago for one month to do as many push-ups as possible each day. I got to where I would stop and do 20 pushups every time I thought about it. Not only did I build up my strength, but my arms were looking great! You can do these on your knees, on your toes or against the wall. However you can get them in! Yes, your arms will probably be sore on Sat., but you will feel great knowing you got it done!

Parma!

Sorry I didn't get a post done yesterday. Wednesday's I have my sweet grandbaby and I spend the whole day just lovin' her up! We had a great day, but I didn't have much time to be online and especially to get anything written.

I've been a little out of whack, as I like to call it. Just feeling out of sorts. It's been going on for a while, probably leftover from Brian's accident. Not feeling depressed, just not on the top of my game. My diet is off, my workouts are not as fun, things just aren't right. I think when I hurt my back, I spiraled down a slippery slope and now I'm trying to crawl back out of it. It's so hard to stay on track when you are feeling good. I'm sure many of you have been in the place and know what I am talking about. So, I'm pulling up my big girl panties and getting back on track - STARTING TODAY!

I've let my journaling go, so I got my cute notebook out this morning and started it again. It was pretty hit and miss. Last entry was Feb 26th. Not good.
I've been eating out too much lately too. This is not good either. Even though I order as healthy as possible (most of the time), I know that at restaurants, you get larger portions, more calories than you think and I tend to eat more.

I'm telling you all this so you can help me to stay on track and get back to my healthy habits all the time. I've done good with my workouts this week. Worked out every day so far and I have a workout buddy group that is coming over and this will help me to stay on track here.
I'm going to get my cookbooks out and plan my meals. I am a true believer in - IF YOU FAIL TO PLAN, YOU PLAN TO FAIL! So, planning my meals is key!
I want to be on track for my April Slim and Shake Challenge. This gives me a few days to get a head of the game! It isn't time to let things slide just because I am going to do a challenge for April. It doesn't mean it is a free for all. Start now. Don't wait!


One of my favorite healthy meals this week has been bruschetta! Nothing better and I got some Parma to try! Parma is a dairy free, parmesean cheese sub. It is soooo good. The wonderful people at Eat in the Raw sent me the original and the Chiptole Cayenne. Oh my, this is the bomb! I'm in love with it!

I have been putting it on all kinds of things, homemade pizza, eggs, salsa, popcorn, you name it, I'm sprinkling it!

Bruschetta recipe:
1 pc bread of choice ( I use spelt bread)
spread with hummus (Sabra brand red pepper hummus is really good!)
olive tapenade
tomatoes or bruschetta tomatoes
sprinkle with Parma! Vegan Parmesean ( I LOVE the chiptole cayenne for a little spice)
You can also add some Sheese!

I toast my bread first, then put the ingredients on and then place under the broiler for just a minute or so. I like to eat it hot! Enjoy!

Function Drinks

The drinks are not heavy, they taste good and my sons loved them. Nick, Jake and Chase immediately tried them and Nick has been back for several more tries :) I caught him opening them up to smell them to see if he wanted to taste them. Luckily, I was able to stop him before he got them all opened. He has loved just about all of them. We had guests over for dinner on Sunday and the girls saw them and wanted to try a couple. Caroline loved the acai pomegrante and Camille enjoyed the acai grape! My favorite was the Citrus Prickly Pear. It was just a little sweet and tangy at the same time! Brian liked the Strawberry Guava!

I like the fact that these are physician developed. I also like feeling that some research was done and thought was actually put into it. Many of the vitamin drinks have been done and done again.

Recipe:

Vegan Express by Nava Atlas

Chana Masala
4 Servings

1 tbsp olive oil
1 large onion, chopped
2-3 garlic cloves, minced
2 - 15 oz cans chickpeas, drained and rinsed
1-2 tsp garam masala or good-quality curry powder
1/2 tsp turmeric
2 tsp. grated fresh or jarred ginger
2 large tomatoes, diced
1 Tbsp lemon juice
1/4 cup minced fresh cilantro, or to taste
Salt to taste
hot cooked grain (rice, quinoa, couscous) optional

1. Heat the oil in a wide skillet. Add the onion and saute until translucent. Add the garlic and continue to saute until the onion is golden.
2. Add the chickpeas, garam masala, turmeric, ginger, tomatoes and lemone juice and about 1/4 cup water. Bring to a simmer, then cook over med-low heat for 10 mins stirring frequently. This should be moist and stewlike, but not soupy, add a little more water if needed.
3. Stir in the cilantro and season with salt. Serve on its own in shallow bowls or over a hot cooked grain, if desired.

Menu suggestions
1) omit the option of aplain cooked grean, serve with curried cashew couscous (recipe on page 93)
2) if you choose to serve this with a plain cooked grain, as suggested int eh recipe, compelte the meal with fresh flatbread and Fruitful Red Slaw ( page 177)
3) If time allows, make Apricot Chutney (page 225) as an accompaniment with any menu

Rest, Relax and Recharge?

Wow, Mother Nature has hit us with a sucker punch :) 6-8 inches of snow and it's still coming down. Tomorrow is supposed to be sunny and 50! Come on Sunshine! We were just walking the dog on Friday with beautiful weather..... go figure. That's way the weather is in Missouri, if you don't like it, just wait 24 hours and it will change.



It is very pretty out though, here's a photo looking out my front door. Now, I took this yesterday well before we got tons of snow.
Last night we went out to our friends house for some good food and a movie. We watched Zombieland. It was an odd movie, but I enjoyed it! the food was great and the company even better!

Today will be a day of cleaning and cooking. I'm planning on beans and cornbread for dinner. Brian loves the cornbread from Alicia Silverstone's The Kind Diet cookbook, so I'll make it and I am wanting some jalapeno cornbread. So, I'll be looking for a great recipe to use.


I'm going to be doing a 3 day Shakeology Cleanse starting tomorrow. I'll be documenting my results here and using my beloved flip camera for some updates as well. Several of my friends have tried this cleanse and have gotten really good results. From 3 lbs and several inches to 10 lbs lost in 3 days. Crazy! It is light on calories, so we'll just have to see how I do with my workouts and whether I'll have to make a few adjustments. I'll post the whole cleanse tomorrow.

Today is a day of rest for me. I love taking one day per week off. No working out, no real work, I try to just spend time with my family and taking it fairly easy. Do you try to do this once per week? I really feel that it is so important. For my soul, my body and my mind. I used to even take the full day off from the computer as well. Haven't been as dedicated to that lately. I'm a bit addicted to the computer and internet.....

First day of spring!


I am so ready for warmer weather. Being in San Antonio last week didn't help much either. It was warm, I was rockin' the flip flops and pedicure! Today is the first day of spring and I was so hoping for a great day (had one yesterday - 70 and sunny), but we woke up to 32* and rain/sleet. We are supposed to get up to 6 inches of snow before it is all over. I'm hoping that the weathermen are wrong!


With Spring here, it is bringing us closer to bathing suit season. UGH! That statement frightens most women. So, I am going to really ramp up the workouts, clean up the diet and increase my water intake.


It's also time to get some spring cleaning done. I'll have to clean one of the rental houses first. Have to get it rented quickly! Then I can tackle my house. I'm not a fan of cleaning, but I'll get the whole family to help out. I know that I'll be glad when it is done. I have a new product to try and will be doing a review of it soon! Goodbye Detergent Spaghetti Scrubs!

Ayla's Herbal Water and Friday Follow




I know that most people talk about how hard it is to drink water. This usually isn't a problem for me, but sometimes I just want something with a little flavor.

Did you know that you should be drinking 1/2 of your body weight in ounces of water daily? There are a few recommendations, minimum of 64 ounces and a maximum of 100 ounces. How are you doing according to this scale? I usually get around 60 - 80 oz.

I wanted to update on my P90X/Insanity journey. I'm still doing my workouts. I am not lifting as heavy as I would like, but with the back still acting up on occasion I'm a little afraid to push it just yet. I skipped Insanity on Monday and did Cardio X instead. It's not as jarring. I'm so ready to get back into it, but if my back hurts today after my Insanity workout, I'll probably bag the Insanity part and just go with the X and X+ workouts this round. Mrs. Renfro Salsa




In San Antonio we got to try a lot of salsa. I love salsa and usually eat some every week. I was so grateful to be able to try Mrs. Renfro's salsas! They are very tasty!! I received Black Bean Salsa ( my fave!), Raspberry Chipotle, Tequila and Mild Chow Chow. We have been enjoying these salsas for the last week or so.

Black Bean is soo good. It's not too spicy, but has great flavor. I loved it with my "cheese sauce". It made a great snack.

Raspberry Chipotle is a sweet salsa and is great as a sauce as well. I like it on tofu! Brian liked it on his chicken.

Tequila is a just as good. I like it plain with tortilla chips!

Mild Chow Chow is just good! I love to put it on beans and rice. My grandma used to make the best chow chow and this is close to it!! Hard to beat Grandma's!

Tequila Sunrise Fish Tacos

Carol's Commentary:
I love tacos of all kinds, especially fish tacos! Enhanced with a double dose of Mrs. Renfro's Tequila Salsa, these tacos are delicious for dinner with a salt-rimmed margarita, or even for breakfast with a champagne-and-freshly-squeezed-orange-juice mimosa.

Ingredients:
•1 cup Mrs. Renfro's Tequila Salsa
•1 tablespoon olive oil
•1 pound tilapia fish fillets
•8 corn tortillas, warmed
•1/2 cup cole slaw mix
Instructions:
In a shallow bowl, mix 1/2 cup Mrs. Renfro's Tequila Salsa with olive oil. Add fish fillets, turn to coat, and marinate for 10 minutes. Grill over medium heat for 4 minutes per side, until fish is cooked through. Place slices of fish into tortillas, garnish with cole slaw, and spoon remaining salsa on top.

vacation fun

We are back from our vacation and boy, I'm tired. A bit cranky too! I'm going to get a workout in this morning and get myself in a better mood.

We had a blast in San Antonio and are ready to plan our next trip! WE went with friends and it was our first trip in the camper. LOVED IT!!!!!

We visited the Riverwalk, Tower of America, the Mexican Market, Farmer's Market, went to the San Antonio Rampage hockey game, Fredricksburg, the oldest Cathedral in the US, the Alamo and ate some good food and some not so good food!


Brian and I had planned on doing the Segway tour, when we got there and Brian tried it out, he decided that his legs just weren't up for it, so Craig and Hermina took off on the tour and Brian and I went to the Alamo. When they got back, they told Brian that there was no way he could've done it, so I'm glad that we didn't go. Nothing worse than getting out there and having to walk all the way back. We did get to try them out in the store and it was fun. I picked it up pretty quickly, but of course, I was in the store.

I took my workout videos and had the best of intentions, but didn't do one of them! We did a lot of walking though, and I am okay with it. I'll just repeat this week of the workout rotation and go on. Do your best and forget the rest as Tony Horton says!

I loved the sun! It was in the 70's and 80's while we were there and the sun was out every day. It's hard to come home to the 40's and overcast weather. I'm freezing. I think it means that I need to move to a warmer climate!

I'm ready for the next trip - anyone have any good suggestions on where to go? We are thinking ocean next, Ahhhh, I can't wait!

Turbo Fun!

It's another Fit Club Monday! Today I am highlighting the workout that got me started! This is my favorite workout of all! Turbo Jam is just so fun, you don't even realize that you are working out. The music comes on and you just have to get up and move!

Today's Fit Club Recipe:

I got some of the best looking kale and swiss chard at the farmer's market in San Antonio. YUM!!! I'll be topping my Dragon Bowl with some Organicville salad dressing. You can also use soy sauce, a little vegannaise, nutritional yeast, any salad dressing or some hot sauce!

Dragon Bowl - Vegan a Go-Go by Sarah Kramer

1 cup brown rice
2 cups kale, chopped
2 medium carrots, grated
2 green onion stalks, chopped
1 cup frim tofu, cubed
dressing or sauce of your choice

Cook rice in a large pot (you'll need the txtra space for the veggies) When rice is done, turn off heat and place kale, carrots, onion and tofu on top of rice. Cover and let sit for 5 minutes. Prepare your dressing or sauce. Assemble each serving bowl with equal parts rice, kale, carrots, onions and tofu. Top with dressing or sauce. Makes 2 servings.

Beachbody

Most of you know that I am a Beachbody coach. I really love my job! It is so much fun to help other people get in shape and get healthy! It inspires me to do my best to stay in shape and healthy too!

While on vacation this week, I haven't done my workouts ( I brought them with the best of intentions), but we have walked everyday and I am okay with that. I think my back will be ready to go when I get home.

Fresh Wave



Good Morning! We are traveling and it has been so much fun, but my internet has been scarce to say the least. So sorry that I went MIA!

We are using our camper and loving every minute of it. I was so blessed to be able to try out Fresh Wave's products! I put the gel in the camper before we left. Sad day for us

*****Sad Post Alert!******

It's a sad day for us today. Our cute little Daisy dog died yesterday. We had the whole family over for dinner last night, all the kids were here and Daisy just laid down and died. I am glad that she didn't suffer, but we are all so sad. Roxy was just going crazy at the door and as soon as Jake went outside, she ran right over to Daisy. It was too late, there was nothing we could do. So, we buried her in the backyard. She loved being outside and loved her yard. Daisy was 15 years old and I knew that she was probably not gonna live much longer, but I was shocked. Roxy and I are really sad today!

I'll be back tomorrow with a more upbeat post and a product review!

Fit Club Monday Recipe:


Guilt Free Fries from The Skinnygirl Dish by Bethenny Frankel
Potatoes are a starchy vegetable, but they are still a nutrient-dense vegetable, so I'm including this semmingly decadent but actually good-investment recipe for fries. Skip the fast food and make these at home. You'll be glad you did.

Serves 4
4 baking potatoes
1 tbsp olive oil
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp paprika

1. Preheat theoven to 425* F. Cut the potatoes into wedges or strips, leaving the skins on. Toss them with the olive oil, salt and pepper. Arrange them in a single layer on a foil-lined baking sheet. Sprinkle with the paprika.

2. Bake for 25-45 mins or until the potatoes are crisp. Serve hot.

Use-what you have variations:

Variation 1 - instead of baking potatoes try: Yukon Gold, Sweet potatoes or yams or fingerling potatoes cut in half

Variation 2 - instead of olive oil, try any other cooking oil

Variation 3 - instead of salt, try any seasoning salt

Variation 4 - instead of paprika try: garlic powder, ground cumin, chopped fresh herbs, cinnamon (for sweet potato option), any seasoning mix .

sleeping on the weekend


It's Finally Friday! YEAH!! I'm not sure why I'm so excited about Friday this week, I have such a busy weekend coming up. We are getting one of our rental properties ready to put on the market and we'll be painting all weekend. But, it is the weekend. So, YAY!!!

Do you change up your routine just because it is the weekend? I try to stick with my normal routine of workout, eating and water, but I just seem to have more fun on the weekend. Since I work from home, it doesn't make much of a difference for me. I do know that when I had an office job, it was completely different!

I think it is so important to get our sleep into a good routine. Even on the weekends, you should go to sleep at the same time and wake at the same times. You can vary a little, but getting out of my routine can affect me for days. Last weekend, my father-in-law, Bill, was in the hospital. I stayed overnight with the in-laws on Friday night and didn't get much sleep at all (about 2 hours), boy talk about a crabby patty!!!! I am still trying to get caught up on my sleep from that night.

So, even though it is the weekend, be sure to stick as close as possible to your sleep routine. A good night's rest is important :

1) Learning and memory: Sleep helps the brain commit new information to memory through a process called memory consolidation. In studies, people who’d slept after learning a task did better on tests later.

2) Metabolism and weight: Chronic sleep deprivation may cause weight gain by affecting the way our bodies process and store carbohydrates, and by altering levels of hormones that affect our appetite.


3) Safety: Sleep debt contributes to a greater tendency to fall asleep during the daytime. These lapses may cause falls and mistakes such as medical errors, air traffic mishaps, and road accidents.

4) Mood: Sleep loss may result in irritability, impatience, inability to concentrate, and moodiness. Too little sleep can also leave you too tired to do the things you like to do.

6) Disease: Sleep deprivation alters immune function, including the activity of the body’s killer cells. Keeping up with sleep may also help fight cancer.

I do know that when I do get enough sleep, I feel better, I look better and Brian will certainly tell you that I am easier to get along with :)
