Parma!

Sorry I didn't get a post done yesterday. Wednesday's I have my sweet grandbaby and I spend the whole day just lovin' her up! We had a great day, but I didn't have much time to be online and especially to get anything written.

I've been a little out of whack, as I like to call it. Just feeling out of sorts. It's been going on for a while, probably leftover from Brian's accident. Not feeling depressed, just not on the top of my game. My diet is off, my workouts are not as fun, things just aren't right. I think when I hurt my back, I spiraled down a slippery slope and now I'm trying to crawl back out of it. It's so hard to stay on track when you are feeling good. I'm sure many of you have been in the place and know what I am talking about. So, I'm pulling up my big girl panties and getting back on track - STARTING TODAY!

I've let my journaling go, so I got my cute notebook out this morning and started it again. It was pretty hit and miss. Last entry was Feb 26th. Not good.
I've been eating out too much lately too. This is not good either. Even though I order as healthy as possible (most of the time), I know that at restaurants, you get larger portions, more calories than you think and I tend to eat more.

I'm telling you all this so you can help me to stay on track and get back to my healthy habits all the time. I've done good with my workouts this week. Worked out every day so far and I have a workout buddy group that is coming over and this will help me to stay on track here.
I'm going to get my cookbooks out and plan my meals. I am a true believer in - IF YOU FAIL TO PLAN, YOU PLAN TO FAIL! So, planning my meals is key!
I want to be on track for my April Slim and Shake Challenge. This gives me a few days to get a head of the game! It isn't time to let things slide just because I am going to do a challenge for April. It doesn't mean it is a free for all. Start now. Don't wait!


One of my favorite healthy meals this week has been bruschetta! Nothing better and I got some Parma to try! Parma is a dairy free, parmesean cheese sub. It is soooo good. The wonderful people at Eat in the Raw sent me the original and the Chiptole Cayenne. Oh my, this is the bomb! I'm in love with it!

I have been putting it on all kinds of things, homemade pizza, eggs, salsa, popcorn, you name it, I'm sprinkling it!

Bruschetta recipe:
1 pc bread of choice ( I use spelt bread)
spread with hummus (Sabra brand red pepper hummus is really good!)
olive tapenade
tomatoes or bruschetta tomatoes
sprinkle with Parma! Vegan Parmesean ( I LOVE the chiptole cayenne for a little spice)
You can also add some Sheese!

I toast my bread first, then put the ingredients on and then place under the broiler for just a minute or so. I like to eat it hot! Enjoy!
