I had started a 30 day Challenge this month, but life threw me a curve ball. I got sick. I don't get sick very often, but this time around it really kicked my booty. I am not back to 100%, but I am starting to feel better. So, we are re-starting the challenge. I'm not sure that I'll be able to workout yet, but I'm well enough to commit to everyone else in the challenge.
30 DAY CHALLENGE:
Workout at least 5 days per week and log workouts in WOWY
Eat Clean and keep a food journal
Take Before Pictures, measurements and weight
Be accountable, supportive to others and help motivate others
That's all there is to it.

Here is the first Clean Eating recipe:

Kathleen's Mom's Tortilla Chip Soup
1 small onion, chopped
1 tbsp oil
1 garlic clove, minced
1 small orange bell pepper, chopped
1 3.8 oz can green chilies, chopped (including liquid)
2 1/2 c vegetable stock
3/4 cup corn, fresh or frozen
1/2 cup fresh cilantro, chopped
1 19 oz can black beans, drained and rinsed
1/2 tsp chili powder
1/2 tsp dried basil
1/4 tsp salt
1/4 tsp blackpepper
1 5.5 oz can tomato paste
tortilla chips
in a medium saucepan on medium heat, saute the onions in oil until translucent. Add the garlic, bell peppers and chilies and saute for 2-3 minutes. Add the stock, corn, cilnro, eans, chili powder, basil, salt , pepper and tomato paste. Stir together well. Bring to a boil, then reduce heat. cover with lid and simmer for 15-20 minutes. Place several tortills chips inthe bottom of each soup bowl before serving. Makes 2 large or 4 small servings. Enjoy!!
